Roasted Heirloom Carrots

I just love spring and all the vegetables it brings. Right now carrots are in abundance and they are so good!

Ingredients:

  • bunch of heirloom carrots, cleaned and greens removed

  • 1 T EVOO

  • 1/2 C chicken stock

  • S & P

  • 1/4 t herbs de provence

Directions:

  1. Preheat your oven to 350 degrees F.

  2. Put your carrots in a large bowl and drizzle with olive oil. Sprinkle the herbs de provence, salt and pepper and toss to make sure they are evenly coated.

  3. Put carrots in a pyrex dish or oven safe casserole dish. Add the chicken stock.

  4. Roast for about 20-30 minutes depending on the size of your carrots. They should be golden and soft.

If you wanted to use vegetable stock, you can always use that in place of the chicken stock.

Cooking time: 30 minutes
