Salmon Stir Fry

I don’t often think salmon when I think stir fry but this dish is really good. Break out of your chicken rut and try this delicious super quick dish.
Ingredients:
1 C basmati rice
3/4 lbs salmon fillet, rinsed and cut into 1″ chunks
a handful of raw shelled peanuts, crushed
1 clove of garlic, finely chopped
thumb sized piece of fresh ginger, finely chopped
1 fresh red or green chile, seeded and finely chopped
a small bunch of fresh cilantro, chopped
2 T peanut or vegetable oil
1 T curry paste
handful of snow peas
1/2 of a 14 oz. can of coconut milk
handful of beans prouts
1 lime
Directions:
Cook your rice according to the package and set aside.
Put a wok on high heat and add your peanut oil. Add the garlic, ginger and most of the chile and stalks of the cilantro. Stir for 30 seconds, then add the curry paste and stir for another 30 seconds.
Add the salmon, cook for a minute or two, add the snow peas and coconut milk. Let everything cook for another minute. Taste and season with salt and pepper as needed.
Put some of the rice in the bottom of a bowl and spoon the salmon over the rice. Sprinkle bean sprouts, crushed peanuts, cilantro and remaining chile. Squeeze the juice of 1/2 a lime over the dish.
Serves 2.
