Steamed Artichoke with Garlic Aioli

Artichokes are hands down my favorite vegetable and lucky for me I inherited my Grandmother Mary’s pressure cooker, affectionately known as the spaceship.
Ingredients:
Artichoke, stock chopped off
2 garlic cloves
1 sprig fresh rosemary
1 tbls plain greek yogurt
S & P
Directions:
Place a steaming basket in the bottom of a pressure cooker (you can use a regular pot it’ll just take longer) and add the artichoke, rosemary and one clove of garlic. Turn that baby on and let it rip for about 30 minutes, depending on the size of your artichoke.
While that is rocking and rolling, make your aioli. Mix up the greek yogurt, salt, pepper and about 1/2 a microplaned garlic clove. Taste as you go because fresh garlic really packs a punch.
When the timer goes off check to see if you artichoke is done by lightly pulling at the leaves. If they come off easier it’s done, if not you’ve got a few more minutes.
Serve with aioli and don’t forget to leave the hairy part.
