Roasted Cornish Game Hens

Perhaps you’ve seen these strange little frozen birds in the freezer section of the grocery store. Don’t be weirded out, they’re delicious and the perfect size for one or two people.

Ingredients:

  • 2 Cornish Game Hens, defrosted

  • 1 lemon, cut in 1/2

  • 1 onion, quartered

  • 4 garlic cloves

  • 4 sprigs rosemary

  • olive oil

  • S & P

Directions:

  1. Preheat your oven to 375 degrees F.

  2. Coat each bird with olive oil and rub with salt and pepper.

  3. Put 1/2 a lemon, 1/4 onion, 2 springs of rosemary and 2 garlic cloves in each bird and place inside a Dutch oven breast down.

  4. Roast the birds with the lid on for 30 minutes.

  5. Remove the lid, rotate the birds breast up and cook for an additional 45 minutes to an hour. Cooking time will depend on the size of the birds, cook until internal temperature reaches 160 degrees F.
