Grilled Salmon Kabobs with Avocado Salad

I don’t know about you but I eat a lot of salmon in an effort to get my Omega-3 and Omega-6s. It is important to eat fish at least twice a week to ensure you get proper levels. You can take supplements or get it from other sources but fish is the best source for adequate absorption. That being said, it gets a little boring so I thought I’d try some kabobs and they were delicious!

Ingredients:

  • 1 lbs salmon, cut into 1″ chunks

  • I avocado, cut into chunks

  • 1/2 a red onion, sliced thinly

  • 1 jalapeño, seeded and diced

  • 1/4 C assorted baby tomatoes, cut in 1/2

  • juice of 1 lime

  • 1 lime, thinly sliced

  • 4 tbls EVOO

  • handful of cilantro, chopped

  • S & P

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1 tsp onion powder

Directions:

  1. First mix up your marinade. In a container with a lid add 2 tbls olive oil, coriander, cumin, paprika, onion powder, S & P. Mix it up, shake it up, whatever and then add your fish chunks. You can do this in the morning or the night before. Just make sure the fish marinades for at least 30 minutes before cooking.

  2. When you’re ready to cook, light your grill or heat your grill pan inside. Soak your skewers for 20 minutes so they don’t burn during cooking.

  3. While you’re waiting you can assemble your salad. In a small bowl combine avocado, red onion, tomatoes, jalapeño, lime juice, 2 tbls olive oil, cilantro and S & P.

  4. Alternate fish and thin lime slice on the skewer.

  5. Grill for just a few minutes on each side. Don’t walk away these cook pretty quickly.

  6. Serve with avocado salad.

The lime slices keep the fish nice and tender. So good!
