Spicy Roasted Purple Confetti Cauliflower

Not only is this dish beautiful, its so good! Go to your local farmers market and pick yourself up some seasonal beauties to make this.

Ingredients:

  • 1 head purple cauliflower, cut into pieces

  • 1 red bell pepper, julienned

  • a handful of assorted baby onions cut in 1/2

  • 4 or 5 cloves of garlic, minced

  • 1 large fresh finger of ginger, minced

  • 1/3 C EVOO

  • couple splashes of sesame oil for flavor

  • S & P

  • a few shakes of red pepper flakes

Directions:

  1. Preheat your oven to 450 degrees F

  2. In a bowl combine cauliflower, bell pepper, onions, garlic, ginger, olive oil, sesame oil and sprinkle a little S & P. Mix well to make sure the vegetables are nice and coated.

  3. Sprinkle a little red pepper on a baking sheet and spread the vegetables evenly in one layer.

  4. Cook in the oven for 20 to 25 minutes.

It’s like a party in your mouth. Don’t be scared of vegetables you’ve never eaten, instead get excited!
