Gluten Free Blueberry Lemon Poppy seed Waffles

I bought some Gluten Free AP flour from Trader Joe’s last week so I had to test it out. I have to get on the gluten free train so I know what all the hype is about. Overall I think the flavors of these waffles are amazing but the texture is different. They are still really good but don’t expect them to be as fluffy or brown as much as waffles made with regular flour.

Ingredients:

  • 1 1/2 C Gluten free AP flour

  • 3/4 C unsweetened coconut milk

  • 2 T. melted coconut oil

  • 3/4 t. vanilla extract

  • juice of one small lemon

  • zest of 1 small lemon

  • 1 T. honey

  • 2 eggs

  • pinch of sea salt

  • 1 t. baking powder

  • 1T. cane sugar

  • 2/3 C fresh or frozen blueberries

  • 1 T. poppy seeds

Directions:

  1. Preheat your waffle iron and spray with oil so the waffles don’t stick.

  2. Combine dry and wet ingredients separately, excluding the blueberries.

  3. Mix the wet ingredients into the dry.

  4. Fold in the blueberries.

  5. Pour about 1/3 of the batter into the waffle iron to cook.

  6. Serve with butter and syrup.

Keep an eye on these waffles because they can burn while you are waiting for them to brown. Happy brunch!
