Dilly Beans

Ingredients:

  • 2 lbs green beans, cleaned and ends cut off

  • 2 1/2 C white vinegar

  • 2 1/2 C hot water

  • 1/4 C salt

  • 2 tsp dill seeds

  • few sprigs of fresh dill

  • 1 tsp pepper corns

  • 4 cloves garlic

  • jalapeno, seeded and cut into quarters (optional)

Directions:

  1. Sterilize your quart jars.

  2. Pop in 2 cloves garlic, pepper corns, dill seeds and fresh dill. You can also add the jalapeno if you choose.

  3. Fill the jars with green beans until you’re about 1/2″ from the top. Some people like to make sure they all line up perfectly but I just jammed mine in there and they didn’t seem to mind one bit and they still tasted great.

  4. Make your brine by combining water. vinegar and salt.

  5. Pour brine over green beans and seal with a sterilized lid.

  6. Process in a water bath for 15 minutes and allow to cool 24 hours on a towel on the counter top (at least over night).

I hope that you find a love of canning like I did. It’s a great way to preserve all of your hard work in the garden all year long.

Makes about 2 quart jars.

Cooking time: 1 -1 1/2 hours.
