Crispy Smashed Potatoes

Potatoes are good but they can be pretty boring. Try these for something new, I bet you’ll be hooked.
P.S. Did you know potatoes are high in potassium?
Ingredients:
baby or fingerling potatoes of your choice
EVOO
S & P to taste
Directions:
Preheat your oven to 350 degrees F.
Steam your potatoes until they are tender, about 10 minutes.
Drizzle a little olive oil on a baking sheet and arrange your potatoes so that they aren’t touching.
Smoosh the potatoes so they are bout 1/4″ thick. I use a drinking glass to smoosh mine.
drizzle a little more olive oil and sprinkle S & P.
Cook the potatoes in the oven for about 20-30 minutes or until the bottoms are brown and your house smells amazing.
I like to use baby yukon gold potatoes or assorted fingerlings, as posted. You know how I love purple things.
