Broccoli and Cashew Crunch

Sick of steamed broccoli? Try roasting it in the oven and adding some nutty zestiness to it for a change. You might just fall in love with folic acid again.

Ingredients:

  • 1 lbs fresh broccoli, florets removed and separated

  • 1/4 C grated Parmesan cheese

  • 1/4 C salted cashews, lightly chopped

  • zest of 1 lemon

  • 1/4 tsp garlic powder

  • 2 tbls melted butter

  • kosher salt

  • freshly ground black pepper

Directions:

  1. Preheat your oven to 400 degrees F.

  2. In a small bowl, combine Parmesan cheese, cashews, lemon zest, garlic powder and pinch of salt. Set aside.

  3. Place the broccoli on a baking sheet.

  4. Drizzle with butter and toss. Season with S & P.

  5. Roast in the oven until broccoli begins to caramelize. About 20 mins.

  6. Remove from oven and toss the broccoli with the cashew mixture.

  7. Serve warm.

This dish has a really nice refreshing taste to it that really compliments the nuttiness of the cashews.
