Broccoli and Cashew Crunch

Sick of steamed broccoli? Try roasting it in the oven and adding some nutty zestiness to it for a change. You might just fall in love with folic acid again.
Ingredients:
1 lbs fresh broccoli, florets removed and separated
1/4 C grated Parmesan cheese
1/4 C salted cashews, lightly chopped
zest of 1 lemon
1/4 tsp garlic powder
2 tbls melted butter
kosher salt
freshly ground black pepper
Directions:
Preheat your oven to 400 degrees F.
In a small bowl, combine Parmesan cheese, cashews, lemon zest, garlic powder and pinch of salt. Set aside.
Place the broccoli on a baking sheet.
Drizzle with butter and toss. Season with S & P.
Roast in the oven until broccoli begins to caramelize. About 20 mins.
Remove from oven and toss the broccoli with the cashew mixture.
Serve warm.
This dish has a really nice refreshing taste to it that really compliments the nuttiness of the cashews.
