Black Bean Quinoa Salad

Ok, this is so good I ate it for four days. Vegan friends you’re in luck because this one is a winner.

Ingredients:

  • 1 C dry quinoa, rinsed

  • 1 tbsp EVOO

  • 1 3/4 C water

  • 1 can black beans, drained and rinsed

  • 1 avocado, chopped into chunks

  • handful cherry tomatoes, quartered

  • 1/2 red onion, diced

  • 1 small clove garlic, minced

  • 1 red bell pepper, chopped into chunks

  • small handful cilantro, diced

  • 2 limes, juiced

  • 1 tsp cumin

  • 1 tbsp EVOO

  • salt, to taste

Directions:

  1. Heat EVOO in a medium sauce pan over medium heat. Once it’s hot throw in the quinoa and toast for a few minutes.

  2. Add water, stir and cover. Let simmer for about 20 minutes.

  3. While that’s cooking away, combine the lime juice, EVOO, salt and cumin to make the dressing.

  4. When the quinoa is fully cooked, add the black beans to warm them up a little. and allow to cool for about five minutes.

  5. Add remaining ingredients and drizzle with dressing and mix.

This is amazing by itself and with grilled fish. Enjoy with a cold beer and you won’t be sorry.
