Berry Granola Buckwheat Waffles (Pancakes)

Buckwheat is amazing, I can’t even begin to tell you how good it is for you. Buckwheat is not actually a grain, it’s a fruit seed that comes from a plant related to rhubarb. It’s packed with fiber and is a great alternative for people with a wheat intolerance.
Ingredients:
Buckwheat pancake/ waffle mix. (Make according the instructions on box)
Mixed berries
Granola (I like blueberry fax for some added Omega-3s)
Directions:
Mix batter according to instructions on box.
Put assorted berries into a blender or food processor and plus a few times to chop the fruit. You don’t want to pulverize it you just don’t want it to be whole fruit.
Mix the berries into the batter, they turn a beautiful pick color.
Pour some of the batter either onto a skillet for pancakes or into the waffle maker.
Sprinkle granola on top for some added fiber and crunch. If you put the granola into the batter directly it will lose its crunch.
Clove the waffle maker until fully cooked or flip pancakes when they start to bubble and cook thoroughly.
Repeat until all batter is used.
Sprinkle with powdered sugar.
Serve with fruit and maple syrup.
I hope you enjoy this healthier alternative to buttermilk waffles or pancakes. Buckwheat Belgian waffles are a much more exciting breakfast than a bran muffin and still packed with fiber for colon health. Your belly and your taste buds will thank you.
