Red Cabbage Slaw with Tangy Carrot Ginger Dressing

This is not your typical soggy mayo soaked slaw. This is purple and yummy and jazzes up your plate while making your palate sing.

Ingredients:

  • 1/2 a red cabbage, thinly sliced

  • 1 carrot, julienned

  • handful of cilantro, roughly chopped

  • 2 scallions, thinly sliced

  • 1/2 avocado, diced

  • handful of toasted slivered almonds (optional)

  • 2-4 tbls tangy carrot ginger dressing

Directions:

  1. Throw everything but the avocado and almonds in a bowl and mix together gently.

  2. Right before you’re ready to eat, top with avocado and almond slivers. It’s better to wait as long as possible so it doesn’t get brown and the almond slivers don’t get soggy.

This is a great side to go with Paleo fish tacos or just to take to a back yard BBQ.
