Cold Weather Soup

This is pretty much my go-to soup. I make it every winter and can make it in my sleep. It warms you up with all kinds of goodness and it’s delicious! When it’s cold and stormy out it’s really nice to make a big pot of soup.
Ingredients:
1 yellow onion chopped
2 or 3 leeks (green parts too) rinsed and chopped
5 red potatoes cubed
4 carrots cut into 1/2” slices
1 large bunch of broccoli cut into crowns
3 cloves of garlic minced
2 32oz. Free Range chicken broth (low sodium)
EVOO
Salt, Pepper, Ginger, Cayenne pepper to taste
1/2 pint half and half
Directions:
Get out a large stock pot, put it on the stove on medium.
Coat the bottom with EVOO and add garlic, onions and leaks.
Add a dash of two of cayenne… just do it.
Cook until the onion and leeks are transparent. Add carrots, potatoes, broccoli.
Add chicken broth. Let simmer until the veggies are all soft (about an hour and a half…. You don’t want to be outside in the storm anyways… get a book.)
Once the contents are fully cooked, transfer to a food processor or blender and blend until smooth. This is probably going to take a few times because you’re making a lot of soup.
Put the blended soup back into the pot. Add the half and half. (You can skip this step if you want but the soup is much creamier and yummy this way).
Salt, pepper and ginger to taste.
This soup is so yummy with a toasted slice of your favorite bread. It fills you up with goodness and it’s good for you! Ginger helps to settle your stomach and cayenne helps fight illness. This soup freezes really well so don’t worry about making too much.
