I only know how to cook for an army so I had a ton of cranberry sauce left over. I used it to make this out of control good pork chop dish.
Ingredients:
4 tbls butter
4 pork chops
S & P
1 tsp garlic powder
2/3 C white wine vinegar
1 1/4 C cranberry sauce
1/4 C shallot, chopped
2 tls chopped fresh thyme
Directions:
Melt butter in a heavy cast iron skillet over medium heat.
Season pork chops with salt, pepper and garlic. Saute in the butter until browned and cooked through (about 5 minutes on each side).
Transfer to a plate and set aside.
Add the wine vinegar to the skillet to deglaze the pan and bring to a simmer. Make sure to scrape all those yummy brown bits in the bottom.
Stir in the cranberry sauce, shallots and thyme. Reduce the heat to medium-low and simmer until the sauce has reduced slightly, stirring occasionally.
Add a little salt and pepper as necessary.
Return the pork to the skillet and any of the juices that might have come out. Heat through for about a minute or so.
Plate the pork chops and spoons the sauce over and serve.
