Pork Chops in Cranberry Sauce

I only know how to cook for an army so I had a ton of cranberry sauce left over. I used it to make this out of control good pork chop dish.

Ingredients:

  • 4 tbls butter

  • 4 pork chops

  • S & P

  • 1 tsp garlic powder

  • 2/3 C white wine vinegar

  • 1 1/4 C cranberry sauce

  • 1/4 C shallot, chopped

  • 2 tls chopped fresh thyme

Directions:

  1. Melt butter in a heavy cast iron skillet over medium heat.

  2. Season pork chops with salt, pepper and garlic. Saute in the butter until browned and cooked through (about 5 minutes on each side).

  3. Transfer to a plate and set aside.

  4. Add the wine vinegar to the skillet to deglaze the pan and bring to a simmer. Make sure to scrape all those yummy brown bits in the bottom.

  5. Stir in the cranberry sauce, shallots and thyme. Reduce the heat to medium-low and simmer until the sauce has reduced slightly, stirring occasionally.

  6. Add a little salt and pepper as necessary.

  7. Return the pork to the skillet and any of the juices that might have come out. Heat through for about a minute or so.

  8. Plate the pork chops and spoons the sauce over and serve.
