Grilled Chicken Caesar Salad

Ingredients:
2 chicken breasts
6 cloves garlic
3/4 C EVOO
4 anchovy fillets
juice of 1 lemon
zest of 1 lemon
1 tsp Italian seasoning
S & P
4 thick slices of focaccia bread
1 whole head of romaine lettuce, chopped
3/4 C freshly grated parmesan cheese
Directions:
First marinate your chicken and preheat your oven to 400 degrees F. Make slits in the chicken breasts so they cook a little faster and the flavors really get in there. Throw them in a bag with 1/4 C olive oil, a splash of lemon juice, lemon zest, 2 garlic cloves sliced, Italian seasoning and a little S & P. Put that in the fridge for 30 minutes.
While that’s happening let make the croutons. Cut the focaccia bread into 1/2″ chunks. and toss in a little olive oil. Spread them on a cookie sheet and put them in the oven for about 15 minutes or until crispy and brown.
To make the dressing, put 2 cloves of garlic, 1/2 C olive oil, lemon juice and anchovies in a food processor and blend until smooth. Add salt and pepper to taste.
Grill the chicken until fully cooked and chop into bites.
In a bowl, combine the lettuce, chicken, croutons and drizzle dressing. Add parmesan for garnish.
The croutons are amazing!
