Cinnamon Cranberry Sauce

Ingredients:

  • 2 C sugar

  • 2 cinnamon sticks

  • 2 large chunks of fresh peeled ginger

  • zest of 1 orange

  • juice of 5 oranges

  • 1 lbs (4 C) cranberries

  • 1 vanilla bean, seeds scraped

Directions:

  1. Throw the sugar and juice in a sauce pan and stir it together real well.

  2. Add the ginger, orange zest to the pan and bring to a boil over medium heat. Stir to dissolve the sugar.

  3. Reduce the heat the medium-low and simmer until the liquid begins to reduce for about 5-7 minutes.

  4. Add the cranberries and vanilla bean and continue to simmer until the cranberries are soft and burst apart (12-15 minutes). Your sauce should thicken up quite a bit.

  5. If you want you can mash the cranberries or leave them as is. Simmer for an additional 5 minutes.

  6. Remove from the heat and take out the vanilla bean and ginger.

  7. Allow the sauce to cool and serve warm or room temp.

Cooking time: about 45 minutes.
