Simple Pasta with Romanesco

Romanesco is one of the coolest vegetables ever. It looks like an alien made it and it’s jam packed with vitamins with calcium and vitamin D. Add it to your next pasta dish while it’s still in season.
Ingredients:
1 head romanesco broccoli, chopped into florets
8 oz of fresh pasta, I used rosemary pasta purchased that morning at the market
4 – 6 slices of prosciutto, torn into pieces
4 tbls EVOO
1/4 C fresh grated Parmesan cheese
zest of one lemon
2 cloves, garlic, minced
1 tsp salt
S & P to taste
Directions:
Boil some salted water until it comes to a rolling boil.
Add romanesco and blanch for about 4 minutes. After cooking transfer to ice water to stop the cooking process.
Cook pasta per the directions and set aside momentarily.
In a pan, heat olive oil and add the garlic and cook for a minute or two.
Add the prosciutto and cook just for a minute.
Put the romanesco into the pan and cook for another minute.
Add the lemon zest, salt and pepper.
Add the pasta and parmesan cheese and toss until ingredients are fully incorporated.
If you need to add more olive oil, go for it.
