Paleo Turkey Meatballs

At least once a week I make zucchini noodles with turkey meat balls for dinner. I found that I was spending a lot of money on meatballs and when I read the packaging they weren’t all that Paleo. Some of them added soy, breadcrumbs and all kinds of weird preservatives so I took it upon myself to bite the bullet and make my own. Not only am I saving money but I know exactly what is in them. I made a large batch and once they were cool I threw them in the freezer. Now when I need meatballs for a meal, I just take out as many as I need, defrost them in the microwave and add them to my meal.

Ingredients:

  • 2 lbs organic ground turkey

  • 1/2 an onion, finely chopped

  • 5 cloves garlic, finely chopped

  • 1/2 bag frozen chopped spinach, thawed

  • small handful of fresh parsley, finely chopped

  • 2 eggs

  • 1/2 C flax meal (ground flax seeds)

  • 1/2 tsp oregano

  • S & P

  • EVOO

Directions:

  1. In a large bowl mix ingredients together. Really get your hands in there and squish it around until everything is really mixed up good.

  2. Heat a little EVOO in a skillet on medium heat.

  3. Scoop out generous amounts of meatball mixture using a teaspoon and roll into balls.

  4. Sear meatballs on all sides in the skillet and put into a crock pot on low. This will keep your meatballs together and they won’t stick to each other.

  5. Once you’ve seared all your meatballs, put the lid on your crock pot and allow to cook on low for 3 or 4 hours.

  6. Put meatballs on a cooling rack with a cookie sheet under to cool completely.

  7. Use your meatballs right away or put them in a freezer bag and pop in the freezer for later use.

The flax acts as a binding agent instead of using breadcrumbs. Not only do you cut calories and carbs but you get the added benefit of the Omega -3s… you’re welcome. If you want to use another kind of meat, go for it. I think next time I’ll add a little sausage meat for added flavor.
