Eggplant fries

So sometimes I really miss french fries. If I crave them long enough, I’m allowed to have a few… and by long enough I mean like a month. To cure my craving without any of the guilt I decided to try these babies out and they did the trick.

Ingredients:

  • Eggplant, cut into 1/4″ strips

  • 3/4 C coconut flour

  • 2 tsp garlic powder

  • 1 tsp oregano

  • 1 tsp parsley

  • 1 tbls salt

  • 1/2 tsp pepper

  • EVOO

Directions:

  1. Cut your eggplant into strips and place in salted water in the fridge for a couple hours. If you’d like you can do this over night. The salt helps to pull the bitterness out of the eggplant.

  2. Preheat the oven to 425 degrees F.

  3. Drain eggplant and mix up your batter. Combine the coconut flour, garlic powder, parsley, oregano, salt and pepper.

  4. Drizzle the eggplant with a little EVOO.

  5. Coat each “fry” in flour mixture and put on a cooling rack with a cookie sheet underneath. Make sure to shake off the excess batter.

  6. Cook in the oven for 25- 30 minutes.

You can also fry these in oil. Heat the oil to 350-360 degrees F and cook for 2-3 minutes.

Cooking time: about 30 minutes, plus 2 hours prep.
