Chicken with Zucchini and Fennel

This is a great hearty dish you can make all in one skillet. It’s delicious and will impress your guests if you’re making it for company.
Ingredients:
6 chicken thighs
S & P
3 tbls EVOO
2 medium or 1 large zucchini, cut into 1/2″ slices
fennel stalks chopped into 1″ pieces, fronds reserved
1 medium red onion, sliced into thin wedges
4 cloves garlic, rough chopped
3/4 tsp dried oregano
1/4 tsp crushed red pepper flakes
1/2 C oil packed sun-dried tomatoes, rough chopped
Directions:
Preheat oven to 450 degrees F.
Heat a cast iron skillet over medium/ high heat and add olive oil.
Sear chicken on both sides.
In a bowl, mix together zucchini, fennel, onion, a drizzle of olive oil, tomato, garlic, red pepper, S &P.
Pour off most of the liquid and add the vegetable mix around the chicken and put in the oven for about 20 – 30 minutes.
When the chicken and vegetables are finished, sprinkle fennel fronds on the dish to make it beautiful and add additional flavor.
Chicken and vegetables doesn’t have to be boring. Get creative!
