Baked Apples with a Crispy Topping

Ingredients:
2 apples, cut in 1/2 with core and seeds removed
1 tsp lemon juice
4 tbls jam, flavor of your choice
2 tbls AP flour
3 tbls butter, cold and diced
3 tbls brown sugar
1/2 C oats
1/4 tsp ground cinnamon
pinch of salt
Directions:
Preheat your oven to 350 degrees F.
Make sure there’s a nice little hole in your apple for the jam.
Rub the apple with lemon juice.
Add 1 tbls of jam to the hole in each apple.
In a small bowl mix together the flour, butter, brown sugar, cinnamon, oats and salt.
Press the mixture on top of each apple making a little mound.
Put the apples in a baking dish and add about 1/4″ of water to help with cooking. Don’t worry, the water will cook off.
Bake until the top is golden brown and the apples are soft, about 45 minutes.
This is great on it’s own or with a little tiny scoop of vanilla ice cream.
