Toasted Pecan Butter Cookies

A friend gave me these cookies over the holidays and the second i had a bite I knew I needed the recipe. Beware… these are dangerous. Make them if you’re going to share otherwise you’ll eat them all.
Ingredients:
3 1/2 oz. (about 1 C) pecan halves
8 oz (2 sticks) unsalted butter, softened
1 C powdered sugar, plus more for dusting
1 tbls vanilla extract
1/2 tsp coarse salt
1 1/4 C AP flour
Directions:
Preheat your oven to 325 degrees F.
Toast pecans on the stove in a skillet. Once toasted, bread them into pieces.
Cream butter and sugar with a mixer until pale.
With mixer running add vanilla and salt, then reduce speed to low.
Gradually add four, beating until just combined.
Stir in pecans until they are mixed in evenly.
Cover dough and stick it in the fridge until it’s firm, about 15 minutes. You can leave it in the fridge over night, just allow it to come to room temp before using.
Drop 2 tbls size scoops of dough onto parchment covered baking sheets 2 inches apart.
Bake, rotating halfway through until edges are golden brown, about 15 minutes.
Let cool on sheets on wire racks for 5 minutes.
Remove from cookie sheets and allow to cool completely on wire racks.
Dust with powdered sugar before serving.
