Who doesn’t like meals that make themselves while you’re out enjoying the sunshine?! Try this and everyone will be happy. Makes quite a bit, so invite your friends over and trick them into thinking you slaved all day.
Ingredients:
Pork loin
1 can ginger ale
2 large onions, cut into chunks
BBQ sauce of your choice, I like raspberry chipotle
Trader Joe’s everyday seasoning
Rolls or buns of your choice
Directions:
Put the onion into the crock pot.
Sprinkle seasoning onto the pork loin and put that in there too.
Cover with ginger ale and cook on low for about 5 hours.
Shred the meat with a couple forks and discard the juice
Add BBQ sauce and cook on low for another 3 or 4 hours.
Serve on a roll. I like fresh bolillos.
You can add additional BBQ sauce once you put the meat on the roll if you’d like. If you don’t eat all the meat this dish freezes really well.
Cooking time: about 9 hours.
