Slow Cooker Paleo Curried Chicken and Vegetables

As everyone knows, curry is my favorite thing. My second favorite thing is cooking in my crock pot so I can go have fun all day and come home to dinner. Curry and Paleo go together like peas in a pod, very win/ win.

Ingredients:

  • 1 – 1 1/2 lbs organic free range chicken (breast, thighs… whatever you want or have on hand.)

  • 1 can coconut milk

  • 1 C low sodium chicken broth

  • 1 head of cauliflower cut into pieces

  • handful or two of baby carrots

  • 1 red bell pepper, cut into strips

  • 1 yellow onion, chopped

  • 4 cloves garlic, chopped

  • 2 tbls curry

  • 1/2 tsp salt

  • dash or two or three of cayenne

  • 1/2 tsp pepper

  • 1 tsp ground ginger

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tbls EVOO

Directions:

  1. Sprinkle the EVOO in the bottom of your crock pot and add chicken.

  2. Throw in the bell pepper, onion, carrots and cauliflower.

  3. In a medium bowl combine chicken broth, coconut milk, garlic, curry, S & P, ginger, cumin, coriander and cayenne to make a sauce. Pour over the chicken and vegetables when it’s to your liking.

  4. Cook on low for 6 to 8 hours.

You can eat this dish by itself if you’re a Paleo pal like myself or you can serve it over rice for your non-Paleo amigos.

Cooking time: about 8 hours.
