Slow Cooker Paleo Curried Chicken and Vegetables

As everyone knows, curry is my favorite thing. My second favorite thing is cooking in my crock pot so I can go have fun all day and come home to dinner. Curry and Paleo go together like peas in a pod, very win/ win.
Ingredients:
1 – 1 1/2 lbs organic free range chicken (breast, thighs… whatever you want or have on hand.)
1 can coconut milk
1 C low sodium chicken broth
1 head of cauliflower cut into pieces
handful or two of baby carrots
1 red bell pepper, cut into strips
1 yellow onion, chopped
4 cloves garlic, chopped
2 tbls curry
1/2 tsp salt
dash or two or three of cayenne
1/2 tsp pepper
1 tsp ground ginger
1 tsp ground coriander
1 tsp ground cumin
1 tbls EVOO
Directions:
Sprinkle the EVOO in the bottom of your crock pot and add chicken.
Throw in the bell pepper, onion, carrots and cauliflower.
In a medium bowl combine chicken broth, coconut milk, garlic, curry, S & P, ginger, cumin, coriander and cayenne to make a sauce. Pour over the chicken and vegetables when it’s to your liking.
Cook on low for 6 to 8 hours.
You can eat this dish by itself if you’re a Paleo pal like myself or you can serve it over rice for your non-Paleo amigos.
Cooking time: about 8 hours.
