Slow Cooker Curried Lentil Soup

It’s very chilly here when the sun goes down and soup sounds like just the thing! This soup is delicious and nutritious! Best part about the whole thing… takes 15 minutes to prep in the morning and then you can come home to a yummy home cooked meal.
Ingredients:
2 medium uncooked carrots, peeled and cut into large chunks
2 uncooked celery ribs, cut into large chunks
1 medium uncooked onion, cut into large chunks
2 or 3 cloves of garlic, minced
2 C dry lentils
2 tbls curry powder
8 C chicken broth
4 or 5 slices of bacon diced
S & P to taste
Directions:
Place all your goodies in a crock pot (slow cooker) except the bacon.
Put the lid on.
Cook on low for about 6-8 hours.
Uncover, stir and add the bacon.
Cook for about another 45 minutes.
Add and little S & P to your liking and serve.
Told ya it was painless. Lentils are full of protein and the curry really compliments them. Happy eating!
