Sauteed Beets and Swiss Chard

Beets and swiss chard are like best friends… they taste amazing together. I have so much chard in my garden this year that I can’t give it away or eat it fast enough so I find myself eating this dish a lot. If you bought some chard recently and don’t know what to do with it, try this out.
Ingredients:
bunch of fresh beets with stems
5 or 6 swiss chard leaves with stems
EVOO
S & P
3 garlic cloves, minced
5 or 6 fresh sage leaves, chopped
Directions:
Clean the beets and chard thoroughly.
Cut the stems and leaves off of the beets and chop into one inch pieces. Put into a bowl.
Peel the beets and slice into small chunks. Put in another bowl.
Cut the stems off of the chard and slice into pieces and add to beet chunks.
Cut the leaves into one inch pieces and add to beet leaves.
Heat some EVOO in a skillet on medium heat.
Add the garlic and sage and allow to cook for a minute or two.
Add the chard stems and beet chunks to the skillet. Season with S & P. Cover with a lid, stirring occasionally. Cook for about 5 or 6 minutes.
Once the beets and stems begin to soften, add the leaves and return the cover. Cook until soft.
Beets and swiss chard are delicious and high in iron. You don’t have to just eat spinach and broccoli my anemic friends, branch out!
