S’more Cookies

When I think s’mores I think camp fires and bonfires surrounded by family and friends desperately trying to get the perfect golden brown crust on my marshmallow by slowly turning it and pulling it away from the fire until it inevitably catches and gets charred. Well these cookies are so much easier and they don’t have any char.
Ingredients:
12 sheets of graham crackers
3/4 C butter
3/4 C brown sugar
3 C mini marshmallows
4 Hershey bars, broken into pieces
1 C milk chocolate chips
Directions:
Preheat your oven to 350 degrees F.
Line your largest oven safe dish with aluminum foil, leaving a 1 inch overhang over the ends, and spray foil with cooking spray.
Line graham crackers up on the foil so that the sides are touching.
In a medium sauce pan, melt butter and brown sugar over medium heat, stirring constantly until the mixture is smooth and comes to a boil (5-6 mins).
Remove from heat and pour evenly over crackers.
Bake 5-6 mins, or until bubbly.
Remove pan from oven and immediately sprinkle mini marshmallows, chocolate chips and bar pieces over the crackers.
Put the pan back in the oven for another 2-3 mins, or until marshmallows begin to soften and puff up.
Cool completely, I threw mine in the fridge for a while.
Once cool, lift from pan using foil and cut into bars.
