Ingredients:
1/2 C Crisco shortening
1/2 C creamy peanut butter
1/2 C firmly packed brown sugar
1/2 C white sugar
1 large egg
2 tbls milk
1 tsp vanilla extract
1 3/4 C AP flour
1 tsp baking soda
1/2 tsp salt
sugar
foil-wrapped chocolate kisses, unwrapped
Directions:
Preheat your oven to 375 degrees F.
Cream together shortening, peanut butter, brown sugar and 1/2 C sugar.
Add egg, milk and vanilla. Beat well.
Stir together flour, baking soda and salt. Add to creamed mixture a little at a time.
Beat on low speed until stiff dough forms.
Shape into 1- inch balls.
Roll in sugar and place 2 inches apart on a parchment lined cookie sheet.
Bake 10-12 mins or until golden brown.
Top each cookie immediately with a chocolate kiss. Press down firmly so that cookie cracks around the edge and the kiss is really in there.
Set on a rack to cool.
I used whole wheat flour and dark chocolate kisses to make them a smidge healthier and they still tasted like little bites of chocolate peanut butter heaven.
