Ingredients:

  • 1/2 C Crisco shortening

  • 1/2 C creamy peanut butter

  • 1/2 C firmly packed brown sugar

  • 1/2 C white sugar

  • 1 large egg

  • 2 tbls milk

  • 1 tsp vanilla extract

  • 1 3/4 C AP flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • sugar

  • foil-wrapped chocolate kisses, unwrapped

Directions:

  1. Preheat your oven to 375 degrees F.

  2. Cream together shortening, peanut butter, brown sugar and 1/2 C sugar.

  3. Add egg, milk and vanilla. Beat well.

  4. Stir together flour, baking soda and salt. Add to creamed mixture a little at a time.

  5. Beat on low speed until stiff dough forms.

  6. Shape into 1- inch balls.

  7. Roll in sugar and place 2 inches apart on a parchment lined cookie sheet.

  8. Bake 10-12 mins or until golden brown.

  9. Top each cookie immediately with a chocolate kiss. Press down firmly so that cookie cracks around the edge and the kiss is really in there.

  10. Set on a rack to cool.

I used whole wheat flour and dark chocolate kisses to make them a smidge healthier and they still tasted like little bites of chocolate peanut butter heaven.
