Paleo Whipped Cream (Coconut Milk)

Fear now fellow cavemen and cavegals! You don’t have to give up whipped cream just because you don’t have to give up whipped cream just because you’ve sworn off dairy. It’s the magic of coconut milk yet again! This is also great for our vegan friends.

Ingredients:

  • 1 can full fat coconut milk

  • 1 tsp vanilla

  • dash of cinnamon

Directions:

  1. Put the can of coconut milk in the fridge over night so that it’s really cold and the fat separates from the liquid.

  2. About half an hour before you’re ready to make your whipped cream, put a bowl in the freezer to get really cold.

  3. Take the coconut out of the fridge, being careful not to shake it up.

  4. Scoop out the white part and put it into your chilled bowl. You can use the watery part for something else or you can drink it.

  5. Add the cinnamon and vanilla. Whip on high using a hand mixer until smooth and creamy. It will start to look like whipped cream.

  6. Serve on a paleo mug cake, fruit… whatever you desire.

Cooking time: about 5 minutes, plus chilling coconut milk overnight.
