Paleo Fried Chicken

This dish gives you the feeling of comfort food without all the guilt.

Ingredients:

  • coconut flour

  • almond flour

  • farm fresh egg

  • garlic S & P

  • Parsley

  • unsweetened coconut milk

  • organic free range chicken breast

  • few dashes of cholula (or whatever hot sauce you like)

  • Coconut oil

Directions:

  1. Cut your chicken breast into strips and place in a sealed bag. Tenderize the pieces by hitting it with a rolling pin until they are thin and even. Don’t try to kill them, you just want them to be tender.

  2. Time to make your dredging: In one bowl put coconut flour and add a little garlic salt and pepper. In another bowl add almond flour, parsley, garlic salt and little pepper. In the third bowl scramble the egg and add a little coconut milk and a few dashes of hot sauce.

  3. Melt coconut oil in a skillet over medium-high heat.

  4. Dredge each piece of chicken first in the coconut flour, then the egg mixture and finally in the almond flour.

  5. Fry in coconut oil on each side until golden brown and fully cooked.

  6. Set on a plate covered with paper towels to soak up any excess oil.

Be gentle with them… the almond flour doesn’t stick quite like regular flour but it has a nice texture and really hit the spot when you’re craving comfort food. This meal is delicious with sauteed beets and swiss chard.
