Oxtail Chili

Ingredients:

  • 6 lbs oxtail

  • 2 cans black beans

  • 1 yellow onion, chopped

  • 1 head garlic, minced

  • 2 tbls chili powder

  • 1 can tomato paste

  • 1 32 oz beef broth

  • 1 16 oz can tomato sauce

  • 1 tsp ground oregano

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1 tsp ground red pepper (cayenne)

  • 1 tsp creole seasoning

  • lots S & P

  • EVOO

Directions:

  1. Season your meat generously with S & P, get all the sides.

  2. Put a skillet on the stove on medium/ high.

  3. Add a little EVOO.

  4. Sear all sides of the oxtail for like 20 seconds.

  5. Throw all of your pieces in a crock pot on low.

  6. Add chili powder, tomato paste, tomato sauce, beef broth, garlic, onion,oregano, cumin, paprika, red pepper and creole seasoning.

  7. Let cook on low for 8 to 10 hours.

  8. Remove oxtail from the crock pot. Separate the meat from the bones. Throw away the bones and shred the meat with your finger.

  9. Return the meat to the pot and add the beans.

  10. Adjust seasoning to your taste.
