Fresh Apple Cake

Ingredients:

  • 1/2 C butter, softened (plus 2 tbls, melted)

  • 1 C sugar

  • 2 eggs

  • 1 tsp vanilla

  • 2 C AP flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • salt to taste

  • 1 C sour cream

  • 1 C finely chopped apples

  • 1/2 C chopped nuts

  • 1/2 C brown sugar

  • 1 tsp cinnamon

Directions:

  1. Preheat your oven to 350 degrees F

  2. In a large mixing bowl, cream the 1/2 C butter and sugar.

  3. Add the eggs and vanilla, beating after each addition.

  4. In a separate medium bowl, mix together the flour, baking soda, baking powder and salt.

  5. Alternate adding the dry ingredients and the sour cream to the creamed mixture, begining and ending with the dry ingredients. Stir until just combined

  6. Stir in apples.

  7. Pour batter into a greased 9″ x 13″ pan.

  8. For the topping, combine nuts, brown sugar, cinnamon and 2 tbls butter in a small bowl.

  9. Sprinkle the topping over the cake batter.

  10. Bake until golden brown, about 35 to 40 minutes.
