Crock Pot Split Pea and Ham Soup

I love hearty soups this time of year. They cook all day and warm you up from the inside. This soup is no exception. I spent 20 minutes in the morning and it was ready to eat when I got done with my day.

Ingredients:

  • 1 16 oz package of dried split peas

  • 1 meaty ham hock

  • 1 C carrots, chopped

  • 1/2 C onion, chopped

  • 1 C celery, chopped

  • 3 garlic cloves, minced

  • 1 bay leaf

  • 2 tsp parsley flakes

  • 1/4 tsp dried marjoram

  • 1/4 tsp dried thyme

  • 1/2 tbls salt

  • 1 tsp fresh ground black pepper

  • 1 1/2 quarts hot water

  • 1/2 quart chicken broth

Directions:

  1. Layer ingredients in a crock pot in the order listed.

  2. Pour in water and chicken broth. Don’t stir.

  3. Cover and cook on low for 8 to 10 hours or until peas are very soft and ham falls off the bone.

  4. Remove bones and bay leaf.

  5. Add a little water if it’s too thick.

  6. Serve! Yup… that’s really it.

This soup is great on a chilly day and served with homemade bread.
