I love hearty soups this time of year. They cook all day and warm you up from the inside. This soup is no exception. I spent 20 minutes in the morning and it was ready to eat when I got done with my day.
Ingredients:
1 16 oz package of dried split peas
1 meaty ham hock
1 C carrots, chopped
1/2 C onion, chopped
1 C celery, chopped
3 garlic cloves, minced
1 bay leaf
2 tsp parsley flakes
1/4 tsp dried marjoram
1/4 tsp dried thyme
1/2 tbls salt
1 tsp fresh ground black pepper
1 1/2 quarts hot water
1/2 quart chicken broth
Directions:
Layer ingredients in a crock pot in the order listed.
Pour in water and chicken broth. Don’t stir.
Cover and cook on low for 8 to 10 hours or until peas are very soft and ham falls off the bone.
Remove bones and bay leaf.
Add a little water if it’s too thick.
Serve! Yup… that’s really it.
This soup is great on a chilly day and served with homemade bread.
