Cream of Asparagus Soup

So good! You can use this recipe to make pretty much any cream of vegetable soup… just substitute your vegetable of choice for the asparagus.
Ingredients:
1/2 stick unsalted butter
1/2 onion, chopped
2 cloves garlic, crushed
2 lbs asparagus, ends trimmed and cut into 1 inch pieces
6 C chicken stock
1 pint sour cream, room temp
2 tsp paprika for garnish
S & P to taste
Directions:
Melt butter in a large saucepan over medium-high heat.
Add garlic and onion, saute for 5 minutes.
Season with S & P.
Add asparagus and saute another 4 or 5 minutes.
Add chicken stock and bring to a boil.
Reduce to simmer and cook for 30 minutes. You want to asparagus to be very tender.
Transfer to a blender or food processor and puree until smooth.
Return to saucepan, stir in sour cream and season with S & P to taste.
Put in serving bowls and sprinkle with paprika. Serve!
