Cream of Asparagus Soup

So good! You can use this recipe to make pretty much any cream of vegetable soup… just substitute your vegetable of choice for the asparagus.

Ingredients:

  • 1/2 stick unsalted butter

  • 1/2 onion, chopped

  • 2 cloves garlic, crushed

  • 2 lbs asparagus, ends trimmed and cut into 1 inch pieces

  • 6 C chicken stock

  • 1 pint sour cream, room temp

  • 2 tsp paprika for garnish

  • S & P to taste

Directions:

  1. Melt butter in a large saucepan over medium-high heat.

  2. Add garlic and onion, saute for 5 minutes.

  3. Season with S & P.

  4. Add asparagus and saute another 4 or 5 minutes.

  5. Add chicken stock and bring to a boil.

  6. Reduce to simmer and cook for 30 minutes. You want to asparagus to be very tender.

  7. Transfer to a blender or food processor and puree until smooth.

  8. Return to saucepan, stir in sour cream and season with S & P to taste.

  9. Put in serving bowls and sprinkle with paprika. Serve!
