Corn Salsa

My sister, Morgan, introduced me to this salsa and it’s amazing! I changed up her recipe a little but it’s mostly hers. This is great for a BBQ or anytime you want something a little different from traditional salsa. The black beans are a great source of protein.
Ingredients:
4 ears corn, kernels removed
1 lb of tomatoes, diced (I use assorted tomatoes from my garden)
2 medium avocados, diced
1 can black beans
1/2 bunch green onion, diced
8 oz mozzarella, diced *optional*
Directions:
Roast the corn on the stove to soften the kernels
Combine remaining ingredients in a bowl. If you’d like this to remain vegan leave out the cheese.
Mix gently with a spatula and pour Spicy Cilantro Lime Vinaigrette over the top.
Enjoy with the chips or other scoop of your choice.
This is so yummy it’s sure to go quickly at your next summer shindig. Great news is it’s easy to make so it’s not a big deal if you have to make batch after batch.
