Blueberry Orange Scone Mix

The holidays don’t have to break your bank. I made these great gifts this year for my loved ones and gave them away along with my Blueberry Peach Jam. For not a whole lot of money you can give someone a nice treat that travels well and tastes great. This mix fits nicely into pint jars.

Ingredients for each jar:

  • 1 1/2 C whole wheat pastry flour

  • 3 tsp baking powder

  • 1/2 tsp of sea salt

  • 1/4 C sugar

  • zest of 1 orange

  • 1/2 C dried blueberries

Directions:

  1. Clean and dry your pint jars.

  2. Add flour, baking powder and salt to the jar.

  3. Shake until well combined.

  4. Tap the jar gently a few times before opening to allow contents to settle.

  5. Put sugar into a small bowl and grate zest of one orange into it. Use your fingers to work the zest into the sugar. The sugar will act as preservative and will help the orange zest maintain its fragrance and flavor longer.

  6. Put a small piece of wax paper into the jar to separate the sugar from the flour mixture. Pack the orange sugar on top of the flour.

  7. Finish the jar off the with blueberries.

  8. Write the following instructions on a card for the recipient: “1. Empty the contents of this jar into a bowl. 2. Cut 1/4 C of butter into the flour. 3. Beat 1/2 C buttermilk and 1 egg together. Add them to the flour mixture and stir to combine. 4 Once combined, turn out batter onto a cookie sheet and pat into a circle. 5. Cut into 8 wedges, but do not separate. 6. Bake at 400 degrees F for 20-25 minutes, until they are golden on top. 7. Serve with jam.”
