Tangy Carrot Ginger Dressing

This dressing is sweet but has a nice little gingery zing to it. It’s super easy to make and delicious over slaw or a salad.

Ingredients:

  • 1/2 cup apple cider vinegar

  • 2 large carrots, chopped

  • 1 inch knob of ginger

  • 2 scallions, whites only

  • 1 tsp Dijon mustard

  • 1/3 cup olive oil mayo

  • salt and pepper

Directions:

1. Put vinegar, carrots, ginger, scallions and mustard into a blender and blend until smooth.

2. Add mayo, salt and pepper on low just to combine.

Yup…. that’s it. Told ya it was easy.
