Vegan Oatmeal Trail Mix Cookies

Don’t close this post! Vegan cookies can be a healthy and delicious alternative to your usual cookie cravings. After all, our vegan friends appreciate a yummy treat as well. Try them, you might just be converted.

Ingredients:
2 sticks vegan buttery sticks
1 1/2 cups dark brown raw sugar
2 tsp vanilla extract
substitute for 2 eggs (I use flax meal)
2 cups oats
1 1/2 organic whole wheat flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup flax seed
1/2 cup unsweetened shredded coconut
1 cup unsweetened raisins
1 cup raw nuts
Directions:
Place racks in upper third of oven and preheat to 350 degrees F. In a large bowl beat butter, brown sugar and vanilla until light and fluffy (about 1 min). Add egg substitute and mix until incorporated. Add oats, flour, baking powder, cinnamon, nutmeg and salt. Mix on low speed until blended. Add flax seed, coconut, raisins and nuts.
Use a teaspoon and scoop out dough. Roll into balls and place on a cookie sheet lined with parchment paper. Lightly press down the dough until the cookies are about 1/4″ thick. Bake for 10 to 13 minutes or until golden. Cookies will feel a little soft when you take them out but they firm up as they cool.
