Snickerdoodles

It’s that time again… the holidays. There’s no better way to celebrate than making cookies on a cold day. The warm oven heats the house and cold toes while the delicious smell warms your heart. Snickerdoodles are an old favorite that are sure to go really fast.

Ingredients:

  • 2 3/4 cups all purpose flour

  • 1/2 tsp salt

  • 2 tsp baking powder

  • 1 cup unsalted butter at room temp.

  • 1 1/2 cups granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

Coating:

  • 1/3 cup granulated sugar

  • 2 tsp ground cinnamon

Directions:

If you have an electric mixer please use, if not you can use a bowl and hand mixer.

In a bowl beat butter and sugar until smooth (about 2 or 3 mins). Add the eggs, one at a time, beat until each are well mixed. Scrape down the sides of the bowl. Beat in the vanilla extract. (If you want to add food coloring, as shown above, this would be the time to do so.) Add the flour mixture and beat until you have a smooth dough. if the dough is soft, cover and stick it in the fridge until it’s firm enough to roll into balls (about an hour).

Preheat the oven to 200 degrees F and place rack in the center of the oven. Line two baking sheets with parchment paper.

Roll dough into 1 inch balls. Roll the balls of dough in the cinnamon and sugar and place the, on the prepared baking sheets. Using the bottom of a glass, gently press down each cookie until it’s about 1/2″ thick.

Bake the cookies for about 8 to 10 mins., or until they are light golden brown around the edges. Remove from oven and place on a wire rack to cool.

Makes about 6 dozen cookies.
