Roasted Red Pepper Humus

Humus is just about my favorite snack ever… or until I eat something else and declare it my favorite. (I have a lot of favorites.) You can use it as a dip with pita or naan bread, use it as a spread instead of mustard and mayo on your sandwiches or just about any other way your little heart desires. On top of being delicious, garbanzo beans are an excellent source of protein.
Ingredients:
4 cloves of garlic
1 15 oz. can garbanzo beans
1/3 cup tahini
1/4 cup lemon juice
1/2 cup roasted red pepper (about 1 medium roasted pepper)
1/4 tsp dried basil
1 dash peprika
4 dashes of hot sauce
Directions:
Using your food processor (or blender if you don’t have one), combine garlic, garbanzo beans, tahini and lemon juice. Blend until smooth.
Add roasted peppers and basil. Blend until smooth.
Add peprika and hot sauce to your liking. I like mine to have a little kick but taste as you season so it is to your liking.
Transfer to a serving bowl and put in the fridge until ready to serve.
Eat it!
That’s really all there is to it. It’s delicious, healthy and a hit at parties.
