Banana Nut Bread

Facebook - Banana nut bread

Did you buy some bananas and forget about them? Don’t throw them out… make banana bread!

Ingredients:

  • 1 1/2 cups AP (all purpose) flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 large eggs (room temp.)

  • 1 cups sugar

  • 1/2 cup unsalted butter

  • 1/2 tsp vanilla extract

  • 3 mushed super ripe bananas

  • 1 cup walnuts chopped

Directions:

  • Preheat oven to 350 degrees F. Spray loaf pan with cooking spray.

  • In a large bowl, whisk together flour, baking soda and salt.

  • In another bowl (or the bowl of your mixer, if you have one) beat the eggs, sugar and melted butter with a hand held mixer on medium-slow speed until combined.

  • Beat in the flour mixture. Don’t add it all in at the same time, do about a 1/2 cup at a time.

  • Add vanilla, banana, coco 1/2 cup of nuts and beat just to combine.

  • Shake gently to smooth.

  • Add the remaining nuts to the top of the batter and lightly press in to make sure they will stick. I also like to slice a banana and add it to the top because I think it looks nice.

  • Bake, rotating halfway through, until a toothpick comes out clean when you insert it into the bread. (About 60-65 mins)

  • Allow to cool for ten minutes and remove from the pan.

This is a great breakfast bread. Don’t let us hold you back though, please enjoy at any time of the day… but of course, in moderation. You can also make muffins, just adjust your cooking time to make sure they don’t burn.
