Kale Chips

Kale chips are on the rise and I see them everywhere in groceries stores these days. Most of the prepackaged ones have weird flavors and don't seem very healthy. I like to know what's in my food so I make lot of things at home. These chips are healthy, low calorie, and packed with great stuff like Vitamin K, Lutein, Vitamin C and our friend fiber! They might take a little getting used to if you eat a lot of potato chips but experiment with spices and flavors to find a version you like best.
Ingredients:
1 bunch kale
1 tbls olive oil
1 tsp kosher or sea salt
Bet you can’t eat just one!
Preheat your oven to 350 degrees F.
Tear or cut the kale into bite size pieces. Remove the stems.
Rinse thoroughly and dry. Press the kale between a paper towel to remove excess moisture so it doesn’t burn in the oven.
Put kale into a bowl and drizzle olive oil on it. Toss with your CLEAN hands until the oil covers the kale evenly.
Put kale on a cookie sheet and sprinkle lightly with salt.
Bake in the oven until edges are brown but not burnt. (About 8 to 10 mins) Set your timer for 8 minutes, check every minute afterwards… this is a fast process.
Remove from oven and eat toasty or allow to cool before putting in a store container. If you put them away hot, you won’t have crispy chips anymore.
