Basil Pesto

If you’ve ever had basil growing in your garden you know that it grows pretty fast and soon a small plant can turn into a lot of herbs. Pesto is great way to use basil and keep your plant from going to seed.

As well as tasting great basil (aka Saint Joseph's Wort) is also rich in antioxidants and has both anti-aging and antiinflammatory proterties,

Ingredients:

  • 2 cups basil

  • 1/2 cup grated parmesan cheese

  • 1/2 cup EVOO (extra virgin olive oil)

  • 1/3 cup pine nuts (you can also substitute walnuts for a cheaper alternative)

  • 3 or 4 cloves of garlic

  • salt and pepper to taste

Directions:

  • Using your blender or food processor blend the basil, cheese, olive oil, nuts and garlic into a paste.

  • Add salt and pepper to taste.

Yep, it’s really that easy. You can put pesto on veggies, fish, pasta… whatever!
